Akki Rotti is a very popular rice-based breakfast dish from Karnataka, India. Akki Rotti means a rice pancake which is prepared using rice flour as main ingredient.
Chop onion and coriander very finely. Chop green chilies. Grate fresh coconut and keep aside.
In a big mixing bowl add rice flour, finely chopped onion, chilies, coriander leaves, grated coconut, cumin seeds and salt to taste. Add warm water as required and prepared a soft dough.
Divide the dough into 3 equal parts.
Grease a griddle or skillet with oil and set it ready. You can use Kadahi also.
Take big lemon size rice flour dough and spread or pat it equally and thinly as possible on a greased pan. You can grease or finger with water or oil to pat the dough .
Make hole in center of the rotti as shown in picture. This will help in evenly cooking of roti.
Now turn on the gas and heat the rotti griddle. Add around a Tsp of oil around the rotti and pour bit oil inside the hole.
Cover the griddle with lid and cook covered on medium heat for few minutes.
Rotti will leave the bottom of the griddle once cooked nicely from one side. Once rotti starts browning flip it over to the other side and cook until golden brown.
Repeat same process for rest of the rotties if you have another frying pan or Griddle. Otherwise you need to cool down the griddle by pouring running water from the tap on the back side. U can pat on wax paper or parchment paper and then transfer to griddle.
Serve hot Akki Rotti with Mango pickle, Chutney or with plain Curd.
