Caprese sandwich is classic Italian vegetarian sandwich – made from pesto sauce, tomatoes, mozzarella cheese, fresh basil, balsamic glaze, seasoned with fresh ground pepper and salt.
Cut tomatoes and fresh mozzarella into thick slices.
Spread pesto on all four slices of bread.
Now will work on one sandwich and will repeat same steps for second one.
Arrange sliced tomatoes on one slice of bread, season with ground black pepper and salt to taste.
Next arrange a layer of fresh mozzarella and drizzle some glazed balsamic.
Next add a layer of fresh basil and arugula leaves.
Drizzle some more glazed balsamic.
Lastly place the second slice of bread on top.
Now heat panini grill or grill pan. Butter the outside of the sandwich flipping carefully. Grill until crisp and golden.
Serve hot.
