A very simple & easy recipe to prepare sweet Pudina Chutney.
Wash and pluck the mints leaves. Discard the stems.
In a grinder add in together mint leaves, ginger, chili, cloves, sugar, and salt. Add in 21/4 cup of water and grind everything to a fine paste.
Heat oil in sauce pan and add in pureed mint paste. Simmer for 2-3 minutes. Adjust the salt and sweetness according to your taste preferences.
Refrigerate the leftover chutney in air tight jar for couple of days.
Adjust the consistency of chutney as per your requirement and liking.
