Step by Step Instructions with Photos

Preparation Steps

  1. Thaw the pastry sheets to room temperature as per given instructions on the cover or at least 40 minutes.
  2. Boil potato and mash potatoes. Thaw peas if using frozen.

Prepare the Filling:

    1. Heat oil in a pan over medium heat. Add cumin seeds, and let them splutter.
    2. Add onion, sauté until raw smell goes away.
    1. Add ginger-garlic paste and green chilies sauté for a minute until fragrant.
    1. Add thawed peas and stir in turmeric powder, red chili powder, and cumin powder. Mix well and let it cook for a minute
    1. Add the boiled and mashed potatoes along with chopped cilantro. Stir to combine everything evenly.
    2. Sprinkle garam masala, sugar and salt to taste. Squeeze lemon juice.
    1. Give everything a nice mix to combine evenly. Remove from heat and let it cool.

    Assemble the Patties:

    1. Preheat the oven to 400°F (200°C). 
    2. Unfold the pastry sheet as shown in pic and cut each stripes into 3 to form a square. 
    1. Roll out each square on a lightly floured surface to about 1/8-inch thickness, lengthwise forming a rectangle shape as shown in picture.
    2. Place a spoonful of the potato filling in the center of each square.
    1. Fold the pastry over to form rectangle, and seal the edges by pressing down with a fork or your fingers. You can shape triangles too.
    2. Repeat until all the pastry and filling are used.

    Bake & Serve

    1. Place the assembled patties on a baking sheet lined with parchment paper.
    2. Brush the tops with milk for a golden finish.
    3. Bake in the preheated oven for about 20-25 minutes or until the patties are golden brown and flaky.
    4. Enjoy the aloo puff pastries hot with a cup of tea, and serve with tomato ketchup, green chutney, or imli chutney.

    • 2 Tbsp. Oil

    • Make in advance and storage: You can make these patties in advance and freeze them before baking. To bake frozen patties, you do not need to thaw. Just bake straight away, When you're ready to enjoy!
