Description

Shrikhand is a traditional Indian sweet made from hung curd/drained yogurt, flavored with saffron and cardamom. This creamy dessert is described as ‘Ambrosia of the Gods’. In India Shrikhand is served in both Maharashtrian and Gujarati wedding, and served in thali meal in many restaurants. Basic Shrikhand has flavor of saffron and fragrance of cardamom but add your choice of fruits like mango, strawberry to make your own variation.

Ingredients
  • 1 cup Hung curd/Drained yogurt (see Recipe Note)
  • 4 Tbsp. Sugar/powdered sugar
  • ¼ Tsp. Cardamoms powder (crushed)
  • 8-10 strands Saffron (soaked in 1 Tbsp. milk)
  • 4-5 pc Pistachio blanched (peeled & sliced)
  • 4-5 pc Almonds blanched (peeled & sliced)
  • 1 drop Yellow jell food color (optional)
Instructions
  1. Tie the yogurt in a piece of muslin and hang it overnight over a bowl, in a refrigerator, to drain the whey. See Recipe Notes for detail recipe.

  2. Soak the saffron in warm milk and keep aside.

  3. Transfer the hung curd into a bowl and add sugar the cardamom powder; whip till smooth.

  4. Add soaked saffron, and mix well.

  5. Add food color if using and chill in the refrigerator.
  6. Garnish with the almonds and pistachios and serve chilled.
