Description

Cream of broccoli soup is a worldwide famous soup. This soup can be prepared and shimmer using single pot. Prepared with broccoli, vegetable stock and milk/cream as core ingredients, this soup is very rich, creamy and  healthy too. Cream of broccoli soup also goes well a toasted buttered bread baguette or croutons.

Ingredients
  • 1 medium size/200 gm Broccoli head
  • 2 Tbsp. Butter
  • 2-3 pc Garlic cloves (chopped)
  • ¼ cup Onion (chopped)
  • 5 Tbsp. All-purpose flour
  • 1.5 cup Vegetable-broth (see notes for recipe link)
  • 1.5 cup Whole milk
  • A generous pinch Fresh Grounded Black pepper
  • 1 pinch Nutmeg powder
  • Salt to taste
  • 3-4 Tbsp. Fresh cream (for garnishing)
Instructions
  1. Chop onion, garlic and celery into small pieces and keep aside.

  2. Chop or break broccoli into florets and blanch them. keep few florets aside for garnish.

  3. Heat butter in a sauce pan or pot.

  4. Add chopped onion, celery and garlic, sauté for few minutes until tender.

  5. Add the all-purpose flour, stir continuously and sauté the flour for 2 minutes. 

  6. Add the drained broccoli florets and mix well.

  7. Add water or vegetable stock, stir well and cover the pot or pan with its lid. Meantime heat milk…no need to boil.

  8. Switch on the flame and pour hot milk to the soup in same pot and stir well.

  9. When the mixture is still slightly hot or warm, using an immersion hand blender, blend the soup till smooth in the same pot. You can also blend in mixer-grinder or regular electric blender.

  10. Simmer the soup on low flame for few minutes.

  11. Lastly add fresh cream, salt, freshly crushed black pepper and nutmeg powder and mix well.

  12. Healthy and yummy the cream of broccoli soup is ready to serve. Pour the soup into soup bowl, garnish with broccoli florets, fresh cream or crushed black pepper and serve hot. 

Note
  • To blanch broccoli florets heat enough water with ¼ tsp of salt in a pot until vigorously boiled. Switch off the flame and soak the broccoli florets into the pot for about 20-30 seconds and then drain the florets. Blanch method help to get rid of the insects inside the florets. You can keep few florets without blanch for garnish.
