This homemade frooti made with fresh mangoes not only taste delicious but also is free from harmful chemicals, colors and preservatives. This recipe is vegan and gluten free too.

Ingredients
  • 3 cup/3 pc Ripe mango (peeled & pit removed)
  • 1 cup/1 pc Raw mango (peeled & pit removed)
  • 1/2-3/4 cup Sugar
  • 1 cup cup Water (to make syrup)
  • 1 Tbsp. Citric acid or lemon juice (or as required)
Instructions
    Make The Sugar Syrup
  1. In a pan add sugar and water, mix and boil over medium-low flame.

  2. Stir and cook until sugar gets dissolved. Turn off the flame once syrup is slightly thickened. This syrup does not need to have a string consistency.

  3. Switch off the flame and let the syrup cool down completely.

  4. Make Mango Puree
  5. In a pan heat 2 cups of water and let it boil.

  6. Now add  peeled, cubed ripe mangoes and raw mango.

  7. Let the mangoes boil on low flame. Once it starts to boil, cover and cook until the mangoes turn soft and mushy.

  8. Turn off the flame once mangoes are well cooked and let them cool down completely.

  9. Once mangoes are cool enough to handle, strain off the cooked mangoes.

  10. Retain the water for later use and add mangoes to blender to make smooth puree.

  11. Strain the puree and add retained water. Mix well.

Note

Mango- Alphonso mangoes are best to make this recipe as they are less fibrous and have beautiful bright orange color. but use any variety as per availability.

Sugar syrup- While sugar and mangoes can be cooked together in one pot, but I feel making sugar syrup separately is a good idea for two reasons. First sugar can make mangoes cooking process longer and second making syrup separately makes it easier to adjust the sweetness as required.

Cooking- For best taste cook mangoes on low flame, stirring occasionally just until raw mangoes pieces are soft and mushy.

Strain- To make smooth and juicy Frooti, please don’t skip the straining step to remove fiber. Mango pulp have fiber specially the raw ones.

Sweetness/Tanginess- Adjust sweetness and tanginess of frooti as per your preference. This also depends upon the variety of mangoes used.

Citric acid/Lemon juice- Anyone these two can be used to balance the sourness of Frooti.
