- Chop onion, garlic and celery into small pieces and keep aside.
- Chop or break broccoli into florets and blanch them. keep few florets aside for garnish.
- Heat butter in a sauce pan or pot.
- Add chopped onion, celery and garlic, sauté for few minutes until tender.
- Add the all-purpose flour, stir continuously and sauté the flour for 2 minutes.
- Add the drained broccoli florets and mix well.
- Add water or vegetable stock, stir well and cover the pot or pan with its lid. Meantime heat milk…no need to boil.
- Switch on the flame and pour hot milk to the soup in same pot and stir well.
- When the mixture is still slightly hot or warm, using an immersion hand blender, blend the soup till smooth in the same pot. You can also blend in mixer-grinder or regular electric blender.
- Simmer the soup on low flame for few minutes.
- Lastly add fresh cream, salt, freshly crushed black pepper and nutmeg powder and mix well.

Note
- To blanch broccoli florets heat enough water with ¼ tsp of salt in a pot until vigorously boiled. Switch off the flame and soak the broccoli florets into the pot for about 20-30 seconds and then drain the florets. Blanch method help to get rid of the insects inside the florets. You can keep few florets without blanch for garnish.
