Note
Mango- Alphonso mangoes are best to make this recipe as they are less fibrous and have beautiful bright orange color. but use any variety as per availability.
Sugar syrup- While sugar and mangoes can be cooked together in one pot, but I feel making sugar syrup separately is a good idea for two reasons. First sugar can make mangoes cooking process longer and second making syrup separately makes it easier to adjust the sweetness as required.
Cooking- For best taste cook mangoes on low flame, stirring occasionally just until raw mangoes pieces are soft and mushy.
Strain- To make smooth and juicy Frooti, please don’t skip the straining step to remove fiber. Mango pulp have fiber specially the raw ones.
Sweetness/Tanginess- Adjust sweetness and tanginess of frooti as per your preference. This also depends upon the variety of mangoes used.
Citric acid/Lemon juice- Anyone these two can be used to balance the sourness of Frooti.
