Homemade Dabeli Masala/Kutchi Masala

Dabeli masala also known as Kutchi masala is a key ingredients to mouthwatering & delicious recipe “Kutchi Dabeli”. This homemade Dabeli masala is very fresh and aromatic you will never regrets putting your efforts in.

In a non-stick pan dry roast red chilies, coriander seeds, cumin seeds, clove, peppercorn, cinnamon, big black cardamom, star anise and bay leaves for a minute or two on medium flame.

Next add in grated coconut and sesame seeds and roast for less than a minute on low flame.

Transfer the roasted mixture into a plate; keep aside for few minutes and let it cool down.

Now place roasted mixture into the grinder bowl. Add citric acid, Kashmiri red chili powder, asafetida, sugar and salt and grind to make coarse powder (no need to grind to fine powder).

Kutchi/Dabeli Masala is ready. Use immediately or store refrigerated into the airtight container up to 10-12 months.
