Oats Vegetable is a quick one pot recipe prepared in no time and perfect for cold wintery day. Loaded with goodness of oats and vegetable, this soup makes perfect comfort meal. This soup is just not very easy to prepare, but it literally comes together in less than 30 minutes.
This soup is a perfect when served hot, and kids friendly too. My kids just loves this soup, loved the way colorful vegetables floats in oats based broth. Step by Step Instructions with Photos
- Finely chop celery, carrot, garlic and beans. Thaw vegetables if using frozen one like pea, corn and beans.
- Heat butter in a pan and add chopped garlic & celery. Sauté until it smells good.
- Add rolled oats and roast it for 1-2 minutes on low flame.
- Add chopped vegetable and give everything a nice mix. Sauté everything for 2 minutes.
- Season with salt and black pepper powder.
- Add water and give everything a nice boil. Cook for 7-8 minutes or until vegetable are cooked. Pour more water if required.
- Add hand torn mint leaves, Give it a nice mix and switch off the flame.
- Soup is ready to serve. Pour the soup in soup bowl, garnish with mint leaves and add lemon juice as required.Serve hot and enjoy!
