- Heat olive oil in a pan; add onion, celery and minced garlic, sauté for 5 minutes over medium heat till onion are soft.
- Add sliced tomatoes, sauté for another 5-8 minutes till tomatoes starts turning gooey.
- Add water or vegetable stock to the pan, and bring to the boil. Lower heat, simmer gently, partially covered for around 15-20 minutes. You can pressure cook it for one whistles. Set aside to cool down.
- Using a hand mixer or a food processor blend the mixture to puree.
- Strain the pureed mixture in the pan, stir in cream, salt and pepper, and simmer over low heat for 2 minutes.
- Garnish with cream and serve hot garlic toast or any bread or baguette.
