In a nonstick pan dry roast black peppercorn, dry red chili flakes, coriander seeds, cinnamon stick, cumin seeds and cloves on a medium flame for 3 minutes, while stirring continuously.

Cool completely and add the nutmeg powder, dry ginger powder, cardamom powder blend in a mixer to a fine powder and store in an air-tight container. Use as required.
