Aloo Masala/Potato Curry: Masala dosa is one of my family favorites and is incomplete without aloo masala. Dosas are savory crepes prepared with fermented lentil and rice or with different other ingredients like moong daal, oats, quinoa. Aloo masala served with these varieties of dosa is a side preparation made with potatoes, sauteed onion, tempered with mustard seeds, urad daal, chana daal and few spices. Today I am sharing my version of aloo masala recipe served with dosa. You can make this recipe less or more spicey as per our preference. Give this recipe a try and Enjoy!!!
Step by Step Instructions with Photos
- Pressure cook or boil the potatoes until soft. Once potatoes are cool enough to handle, peel and mash them.
- In a pan heat oil. Once oil is hot, add mustard seeds, urad daal and chana daal. Sauté till mustard seeds splutter. Then add red chili, green chili, curry leaves and hing. Sauté for 30 seconds.
- Now add chopped onions, sauté till onions turn light golden brown.
- Once onion is done, add mashed potatoes, turmeric powder, sugar and salt. Add 3-4 Tbsp. water to make smooth curry.
- Give everything a nice mix and cook for 2-3 minutes. Add lemon juice and chopped coriander leaves.
- Give it a mix and switch off the flame.
- Potato masala is ready to serve. Serve hot with your choice of Dosa.
