Khopra Patties- Khopra Patties is a very famous street food of Indore, India. Also known as Indori Khopra patties is a crispy potato patty stuffed with spicy, sweet and tangy coconut and dried fruits stuffing. Khopra is dried coconut in Hindi. These crispy, crunchy patties taste best when serve hot with green chutney and tamarind chutney.

These patties can be prepared during fasting also, just by replacing arrow root powder with corn flour. You can prepare patties before hand and freeze them, fry just before serving. Give this simple and easy recipe a try and Enjoy!!!

Step by Step Instructions with Photos

For Stuffing:

  1. Chop cashews, coriander, ginger and chili. Keep aside.
  2. In a mixing bowl add coconut, chopped cashews, raisin, ginger, chili, coriander, black pepper powder, lemon juice, sugar and salt to taste. Mix everything altogether and keep aside.

For Khopra Patties

  1. Take boil potatoes, peel and mash it. In a mixing bowl add mashed potatoes, corn flour, black pepper powder and salt.
  2. Using hands mix everything to form a smooth dough. Don’t over knead the potatoes, potatoes get sticky when over kneaded. If dough gets sticky, refrigerate for 15-20 minutes and then proceed. 
  3. Divide the dough into 8 equal parts.
  1. Now on your greased palm flat each potion and stuff with coconut-dried fruits mixture.
  2. Roll gently between your palm and give a round shape as shown in picture.
  1. Refrigerate the stuffed koftas for 20 minutes before frying.
  2. After 20 minutes, deep fry coconut patties till golden brown. Drain on kitchen paper towel.
  1. Serve hot with green chutney and tamarind chutney.

Note

  • If making for kids: Skip green chili if making for kids.
  • If making for fasting: These patties can be prepared during fasting also, just by replacing arrow root powder with corn flour.
  • Refrigerate patties for minimum 20 minutes for hassle free frying. It helps patties form getting burst in oil.
